Ingredients
- 1 whole fresh K2 Chicken (3-4 lbs)
- 2 lemons, one juiced, one sliced
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 onion, quartered
- 2 carrots, chopped
- 2 potatoes, chopped

Preheat oven to 425°F

Mix lemon juice, garlic, herbs, olive oil, salt, and pepper

Loosen skin on chicken and rub herb mixture under the skin

Rub remaining mixture on the outside of the chicken

Place lemon slices and onion inside the cavity

Place chicken on a bed of carrots and potatoes in a roasting pan

Roast for 1 hour 15 minutes or until internal temperature reaches 165°F

Let rest for 15 minutes before carving
